Bring on the Potato [or Zucchini] Latkes -- quick to make, totally substantial and travel well for mid-day nourishment.
Potato Latkes
1 grated potato [or zucchini!]
1 egg
as much garlic as you can stand [i like 3 cloves chopped fine]
1 T chopped rosemary [or parsley!]
1 C. whole wheat pastry flour
butter in the skillet.
combine and fry some patties up.
